Feeding Honey Bees in the South: Building Winter Stores Before Cold Weather Arrives

Winter preparation for honey bees in the South looks different from winter preparation in northern states. Our winters may be shorter and milder, but Southern colonies remain active for much of the winter, brood rearing can begin surprisingly early, and warm spells allow bees to fly and consume additional stores. A colony that appears heavy in November can become dangerously light by January or February.
For Southern beekeepers, successful winter feeding is less about reacting to a starving colony in December and more about building adequate reserves during late summer and early fall while temperatures are still warm enough for bees to process syrup efficiently.
How Much Food Does a Colony Need for Winter?
In my opinion, 35–40 pounds of stored honey or processed syrup above the brood box going into winter is a reasonable target in the Atlanta area. However, this could fall short during an unusually warm winter, when bees are foraging, expending energy, and using additional resources. It’s always a good idea to check the hive’s weight in mid-January and add dry sugar or fondant if necessary.
Mississippi State University Extension recommends having about 60–65 pounds of honey or stored syrup above the winter cluster in late autumn, while its beekeeping calendar uses a target of approximately 65–70 pounds of stored honey by the end of October.
University of Georgia Extension approaches the same question by total hive weight, recommending that colonies weigh at least 100 pounds in late fall and that colonies short on stores be fed supplemental syrup.
Those numbers are important even in Georgia and the Deep South. Honey bees do not hibernate. They remain alive as a colony throughout winter and consume carbohydrates to generate heat. Even more importantly, queens may begin increasing brood production during January. Once brood is present, the colony’s energy requirements increase substantially because workers must maintain brood-nest temperatures near 95°F.
This is why late winter starvation can be a greater concern than December cold.
A colony that goes into winter marginally supplied may survive November and December only to run out of food during January or February when brood production begins increasing.
Start Feeding Before the Colony Is Desperate
One of the most useful feeding strategies for Southern beekeepers is to evaluate winter stores during late summer, rather than waiting until late fall.
After the primary honey crop is removed and colonies enter the summer dearth, inspect the amount of stored honey surrounding the brood nest. In many parts of Georgia, colonies may experience a substantial late-summer nectar shortage before goldenrod and other fall forage becomes available.
UGA notes that Georgia nectar flows vary considerably by region, with goldenrod providing important September and October forage in parts of the state.
Natural fall forage can help tremendously, but I don’t like depending entirely on what might bloom.
Drought, excessive heat, poor soil moisture, storms, mowing and other environmental conditions can dramatically reduce a fall nectar flow.
If a colony is light, late summer is the time to begin correcting the problem.
Why I Like 1:1 Syrup From Late Summer Into Fall
A 1:1 sugar syrup—approximately equal parts granulated sugar and water—is commonly associated with spring feeding because its relatively high water content resembles nectar and is readily consumed by bees.
It can also be useful during late summer and early fall in the South, particularly when feeding begins early enough.
The advantage isn’t that 1:1 syrup contains less moisture than 2:1—it doesn’t. A 2:1 syrup actually contains less water and requires less evaporation.
The advantage is timing.
Starting a steady feeding program earlier gives bees weeks of warm weather to consume the syrup, move it into the comb, reduce its moisture content and organize those stores around the brood nest before cold weather arrives.
That can be preferable to discovering a major food shortage in November and attempting to put large quantities of liquid syrup into a colony at the last minute.
Bees turn nectar or sugar syrup into stored food partly by removing water. UGA notes that incoming nectar is evaporated until honey reaches approximately 18% moisture before it is capped.
As temperatures become colder, that processing becomes more difficult.
Mississippi State specifically warns that feeding liquid syrup during extremely cold weather can chill colonies because bees must evaporate water from the syrup as they convert it into stored food. MSU recommends completing supplemental fall feeding by approximately the end of October under Mississippi conditions.
That principle applies well across much of the Southeast:
Feed early enough that the bees can finish the job.
What About 2:1 Fall Syrup?
Heavy syrup—roughly two parts sugar to one part water—is traditionally recommended when a colony needs to add substantial winter weight quickly. UGA specifically recommends heavy 2:1 syrup for colonies that are light in late fall.
There is good reasoning behind that recommendation. Because 2:1 contains considerably less water than 1:1, bees have less moisture to remove before storing it.
So 2:1 syrup itself is not more likely than 1:1 to create moisture problems.
The potential problem is waiting until temperatures are already cold before feeding any large quantity of liquid syrup.
Cold-weather feeding introduces water into a hive at the same time that bees are less able to ventilate, evaporate and process it. The colony itself also produces considerable water vapor through respiration. Excessive condensation above the winter cluster is something every beekeeper should work to avoid.
My preference is therefore to identify light colonies early and build their stores gradually from late summer through fall, rather than relying on emergency liquid feeding after winter weather arrives.
If a colony is still significantly underweight late in the fall and temperatures remain suitable for feeding, concentrated 2:1 syrup can be an efficient way to add stores quickly. Once consistently cold weather arrives, dry sugar, fondant or another low-moisture emergency feed may be a better choice than continuing to introduce liquid syrup.
Keeping Sugar Syrup Fresh With Thymol
One challenge with feeding syrup during hot Southern weather is spoilage.
Anyone who has left a feeder in a Georgia apiary during August or September knows how quickly sugar syrup can begin to develop mold, yeast or fermentation, particularly when temperatures remain high.
Sucrose syrup is naturally susceptible to mold and fermentation.
A properly formulated thymol syrup additive can help inhibit microbial growth and extend the useful life of prepared syrup.

Thymol is a naturally occurring aromatic compound associated with thyme. Beekeepers have used small concentrations of thymol in syrup for many years specifically to inhibit fermentation and mold. The American Bee Journal discussed the practice in 2025, including beekeeper experience using small amounts of thymol to keep stored syrup and bucket feeders from developing mold.
For the beekeeper, keeping syrup stable has several practical benefits.
The feeder stays cleaner. Syrup remains palatable longer. Less spoiled syrup has to be dumped and replaced. Feeders require less cleaning between fillings, and colonies are less likely to encounter sour or mold-contaminated feed.
For an operation feeding many colonies, reducing wasted sugar and labor can become significant.
Thymol should be used at an appropriate, carefully measured concentration. More is not better. It should also be viewed as a syrup-preservation tool rather than automatically being considered a treatment for honey bee diseases or Varroa mites. Feeding additives and pest treatments have different purposes and should be used accordingly.
Because thymol can also affect the aroma and flavor of honey at sufficient concentrations, syrup feeding containing thymol should be kept separate from the production of marketable honey unless the particular product directions and applicable regulations provide otherwise. Research has shown that thymol can persist temporarily in honey and wax following thymol hive treatments and potentially affect honey’s flavor.
Choosing the Right Bee Feeder
There isn’t one perfect feeder for every apiary. Each design has advantages and disadvantages.
Frame Feeders

A frame feeder, sometimes called a division-board feeder, replaces one or more frames inside the hive.
Advantages: Syrup is located directly inside the colony, protected from weather and generally accessible to the bees even when outside temperatures cool. Because the syrup is enclosed within the hive, it also creates much less opportunity for neighboring colonies to discover the feed.
Disadvantages: Opening the colony is normally required for refilling. Feeders take up frame space that otherwise could contain brood or winter stores, and poorly designed feeders can drown large numbers of bees. Feeders with ladders, floats, textured walls or other anti-drowning features are strongly preferred. Mississippi State specifically notes drowning as a problem with some older division-board feeder designs.
Inverted Bucket Feeders

Inverted pail or bucket feeders are among my preferred choices when substantial amounts of syrup need to be delivered.
A properly operating bucket feeder forms a vacuum after being inverted. Bees remove syrup through small openings in the lid, and atmospheric pressure prevents the entire bucket from draining into the colony.
Advantages: They can hold a large quantity of syrup, are inexpensive, quick to refill and easy to exchange with a full bucket. They are particularly convenient when feeding multiple colonies.
When positioned over the inner-cover opening or directly on the frame top bars, and enclosed within an empty hive body, the syrup remains inside the hive environment and is far less exposed to robbers.
Disadvantages: A damaged lid, poor seal or incorrect hole size can cause leakage. Buckets exposed directly to sunlight may experience pressure changes as the syrup and air inside warm, potentially increasing dripping. They also require additional equipment above the colony if you want the bucket completely enclosed.
Internal or Hive-Top Feeders
Internal top feeders sit above the brood boxes and allow bees to access a relatively large reservoir of syrup while keeping the feed enclosed within the hive.
Advantages: Large capacity, reduced robbing compared with exposed feeders and easy refilling without removing brood frames. Many are excellent choices for feeding a large quantity of syrup in a relatively short period.
Disadvantages: They add cost and equipment, can be heavy when filled, and some designs allow bees to drown if floats or access screens aren’t properly installed. Any leaking top feeder can also create a serious mess inside the hive.
The best feeder is ultimately the one that lets you feed efficiently, keep the syrup inside the colony and minimize drowning, leaking and robbing.
Why I Avoid Entrance Feeders During a Dearth

Entrance feeders are convenient. They’re inexpensive, easy to see and can be refilled without opening the hive.
Unfortunately, those same characteristics create their biggest disadvantage.
The syrup is located directly at the entrance where every bee in the neighborhood has an opportunity to smell it.
During a late-summer dearth, robbing pressure can become intense. Once robber bees locate an easy carbohydrate source, they may investigate the colony itself. A strong neighboring hive can overwhelm a weaker colony, steal its stores and sometimes destroy the colony in the process.
Mississippi State Extension specifically advises against entrance feeders for this reason, noting that syrup at the entrance can attract robber bees from neighboring colonies and that a strong colony can overtake a weaker one. They recommend placing syrup inside the hive away from the entrance.
For Southern beekeepers feeding during August, September and other periods of nectar shortage, that’s an especially important consideration.
A feeder shouldn’t advertise to the entire apiary that food is available.
Winter Feeding Starts in Late Summer
Good winter preparation isn’t something I want to begin when the first frost arrives.
By that point, I want the work largely finished.
For colonies here in the South, I want to see roughly 60–70 pounds of stored honey and syrup available for winter, with substantial stores positioned where the winter cluster can reach them. Colonies should be evaluated beginning in late summer and monitored through fall rather than assuming the fall nectar flow will provide everything they need.
Starting 1:1 syrup during the late-summer dearth gives a light colony time to gradually build reserves while temperatures remain favorable for processing syrup. If fall arrives and a colony remains significantly underweight, heavier 2:1 syrup can add carbohydrates efficiently—but it is still better to complete liquid feeding before genuinely cold weather arrives.

And regardless of what syrup you use, keep the food inside the hive whenever possible. Frame feeders, inverted buckets and internal top feeders all accomplish this better than entrance feeders and greatly reduce the chances that supplemental feeding turns into a robbing problem.
The goal is simple:
Build strong winter stores early, keep the feed clean, and give the colony enough time to put everything where it belongs before winter arrives.
A Southern winter may be mild compared with one farther north—but a colony can’t survive a mild winter without food.
